The Alchemy of N/UM Wine Infused Salts

The creation of N/UM Wine Infused Salts is a refined act of alchemy in which salt and wine are united through slow infusion, careful curing, and natural evaporation. During this process, the mineral composition of the salt binds with the wine's tannins, fruit esters, and phenolic compounds, allowing the flavor and aroma of the wine to become deeply integrated. Sea salt, being more porous, readily takes on the color of the wine, resulting in vibrant, richly pigmented crystals. By contrast, Kalahari desert salt, with its dense structure and ancient purity, resists pigment absorption but transforms in other ways. 

  • When paired with red wine, it gradually develops a warm, golden hue, reflecting an internal maturation of character rather than surface staining. 

  • When infused with Chardonnay, the desert salt retains its natural color but exhibits a heightened clarity and brilliance, as though the wine has polished each crystal from within. 

This evolving aesthetic, shaped by terroir and time, makes each jar a living testament to the quiet sophistication of African craftsmanship.

The result is a deeply flavored, richly colored salt that carries both the mineral depth of its origin and the sophisticated character of the wine. It is used as a finishing touch on dishes, adding visual beauty and a layered, elegant taste profile.

N/UM went one step further and blended these wine-infused salts with unique herbs from the African terroir. 

What is Special About the Selected Herbs?

The herbs selected for the African Queen Series are indigenous to Southern Africa and are revered for their unique flavor profiles, cultural significance, and deep connection to the land. Each one enhances the salt and wine infusion with a distinct identity. 

  • Hibiscus contributes a tart, fruity brightness with floral undertones.

  • Rooibos offers a smooth, earthy depth with subtle hints of vanilla and honey.

  • Buchu introduces a bold, aromatic intensity, characterized by notes of blackcurrant, mint, and camphor. 

Together, these botanicals create a layered, expressive experience that honors African heritage and elevates each culinary moment.
