Meet Buchu: The Herb You’ve Never Heard of But Won’t Forget

If flavor could sparkle, it would taste like buchu.

Fresh. Minty. A little wild. This rare herb, native to South Africa, is one of the continent’s best-kept secrets and one of the stars of our newest salt blends.

What is Buchu?

Buchu (pronounced boo-hoo) is a small shrub traditionally used by the Khoisan people for centuries, both in medicine and ritual. It’s known for its uplifting, aromatic oils and has been called “Africa’s mint” for its crisp, clean flavor. But buchu is more than just minty, it’s citrusy, slightly floral, and completely unique.

Found in the mountainous terrain of the Western Cape, Buchu is one of the most sacred plants in the Khoisan pharmacopeia. It is harvested in high-altitude regions and revered for its medicinal potency.

Historically, Buchu was used for internal purification, wound care, and spiritual protection. It featured prominently in rituals of passage and was often carried by hunters and healers as a talismanic herb. The leaves were infused in teas, oils, and poultices to invoke clarity, resilience, and ancestral guidance.

The salt: Buchu, Siwela Red Blend, and Kgalagadi Ancient Salt

Tasting Prelude

This blend expresses boldness and structure. Buchu leads the profile with unmistakable clarity.

Chef Kudzai’s Note

This composition is built around contrast and control. The Siwela Red Blend offers depth through ripe plum, warm spice, and soft oak tones. Buchu enters with botanical sharpness and aromatics that include wild mint, blackcurrant leaf, and lemon zest. It does not yield or soften easily. Instead, it brings a defined edge that cleanses and elevates the palate. The Kgalagadi salt anchors the experience with its coarse texture and ancient mineral purity. The final profile is clean, wild, and invigorating, reminiscent of cool air after a summer storm.

Recommended Pairings

Best enjoyed with grilled venison, braised lamb shoulder, roasted mushrooms, or as a flavor rim for herbaceous gin cocktails.
